Today was Healthy Eating Day and Simon’s smoothies went down a treat! Here are the recipes for two of his smoothies: Berry Breakfast Smoothie and Super Green Smoothie. The favourite amongst our professional tasters (i.e. the students) was the Super Green Smoothie (just don’t tell them what was in it!)
Breakfast Berry Smoothie (serves 3-4)
Ingredients
- 2 bananas peeled
- 250ml freshly squeezed orange juice
- a mix of berries of your choosing (I love raspberries!)
- 100ml of natural yogurt
- A few tablespoons of porridge oats
- A tiny squeeze of honey (optional)
Blend everything up in a blender of smoothie maker and serve.
Super Green Smoothie (serves 2-3)
Ingredients
- 6 green apples
- 1 lime (chop top and tail but leave rest of skin on)
- 2cm ginger root
- 1-2 sticks of celery
- 1-2 big handful of spinach
- half a cucumber
- 1 peeled ripe avocado
Use a juicing machine to juice all the ingredients except for the avocado. (You can keep one chopped apple aside too, if you like.)
Pour everything into a blender and add the avocado (and spare apple if using) and blend. You should get a lovely green-coloured smoothie!
